curiosity: this morning i went to breakfast at a 24/7 chain restaurant. i ordered 2 eggs 'up' with toast, jelly, and coffee ... i order eggs probably a half-a-dozen times a year, and i usually get them scrambled - but today i wanted to do different. a moment or so after placing my order, the waitperson returned and explained that it was [apparently unknown to her before this] the policy of their chain that they will not / do not cook eggs 'up' with soft gooey centers, only scrambled or 'over' easy/medium/hard. can anyone tell me why? i'd like to be enlightened.

Because of salmonilla (sp?) I suspect. Don't want to kill off their patrons.
It's based on a fear of salmonella. Strangely, they aren't afraid of being sued over clogged arteries from the bacon.

by the way, over-medium is the best way. (omelettes don't count)
